Saucy Slow-Cooked Scoops
Ingredients:
1-2 lbs chicken breasts
1/3-2/3 c Bayside Pepper Sauce
(Chicken amount and Sauce amount will vary by how many people you are serving)
Preparation:
Toss 1/3 cup Bayside Pepper Sauce and 1 lb chicken (or 2/3 and 2 lbs chicken) in a slow cooker and cook on low for 5-7 hours. Chicken is done when it pulls apart easily with 2 forks. When done, add a can of rinsed and drained black beans or pinto beans. Let warm for another 20-30 minutes and serve with sliced avocado and scoop tortilla chips.
Bayside Shrimp Recipe
Ingredients:
1 lb peeled, deveined shrimp (med/lg)
2 bell peppers, rough chopped
1/3 yellow onion, rough chopped
2 tbsp oil
1 cup Bayside Pepper Sauce, divided use
Preparation:
Sauté the peppers and onions in oil until softened. Add shrimp to the mixture and sauté stirring frequently until no longer translucent. Add 1/2 cup Bayside Pepper Sauce and stir until shrimp are cooked through (shouldn't be more than another 2 minutes)
When shrimp are cooked thoroughly, remove from heat and stir in more Bayside Pepper Sauce, to taste.
Serve on salad, in a wrap, or on cucumber slices as an appetizer.
Bayside Veggie Recipe
Ingredients:
4 thick stalks of asparagus, cut into 2 inch pieces
1 yellow bell pepper, sliced
1 medium tomato on the vine, cut into eighths
1/8 red onion, sliced thin
2 tbsp oil
1/4-1/2 cup Bayside Pepper Sauce
Preparation:
Sauté veggies in oil until softened. Toss in Bayside Pepper Sauce and continue to sauté for 2-3 minutes. Serve as a side dish or on top of mixed greens.
